Heat the oil in a small skillet over medium heat. Add the onion, cover, and cook until softened, about 5 minutes.2. Transfer the onion to a lightly oiled 3 1/2 to 4-quart slow cooker. Add the cornmeal, salt, and 1/2 teaspoon of the chili powder. Stir in the boiling waater until well combined. Cover and cook on Low for 6 to 8 hours, stirring occasionally.3.
