1 tbsp olive oil
3 cloves garlic, peeled and diced

2 leeks, washed and diced
2 carrots, peeled and sliced
1 cup mushroom slices, washed
1 tbsp dried parsley
1 tsp paprika
1/2 tsp dried sage
1 tbsp tamari
1/2 tsp sea salt
1/4 tsp black pepper

Here is how you make Shephard's Pie:

In a pot, heat olive oil, add the onions and garlic, saute` until soft, add the carrots and leeks, add the lentils and 1 1/2 cups water, bring to the boil, turn down heat to medium, and cook for 20 mins or until lentils and vegetables are just soft.In another pot, put the potatoes, and 2 cloves garlic with salt and water, bring to a boil, then turn heat down, cook until soft. Drain, leaving a little liquid for mashing.In a small pot, warm the olive oil and saute the mushrooms with the last clove of garlic until soft, add a little of the lentil stock, add the paprika, sage and tamari, blend with a hand blender, season with a litlle salt and pepper.In a greased casserole dish, place the lentil mixture, pour the sauce over the lentils, and then top with the mashed potatoes.Bake in a preheated oven for 375f for 20 mins, then 400f for 10 mins.Serve hot.Serving Size:4
