1 1/4 C cornmeal
1 tsp salt

4 C boiling water
SALSA TOPPING
2 1/2 C chunky salsa
1 T chili powder
1 1/2 C frozen corn, thawed
1 (4 oz) can of diced green chiles
2 T minced red onion
2 T minced fresh cilantro (garnish)
S&P to taste

Here is how you make Enchilada Polenta Pie using a Slow Cooker:

1) Heat the EVOO in a small skillet over med heat. Add the onion, cover, and cook until soft. Approx 5 min.2) Transfer the onion to a lightly oiled 4qt slow cooker.Add the cornmeal, salt, and 1/2 tsp chili powder.Whisk in the boiling water until well combined. Cover and cook on low for 6-8 hours.3) In a large bowl, combine the rest of the ingredients.4) About 30 minutes before serving, spread the salsa mix over the top of the polenta.
