Oil, 1 tablespoon
Onions, raw, 1 small
Zucchini, 1 cup, sliced
Mushrooms, fresh, 2 cup, pieces or slices
Yellow Sweet Corn, Canned, 1 can drained
Garlic, 1 tsp
Tomato Sauce, 6 oz can
Seasonings: You can use a Taco seasoning mix packet or do it yourself with more or less of the the following:
about 1 tsp chilli powder and oregano
1/2 tsp each paprika, cumin, curry, thyme, sage,
salt & pepper to taste

Bob's Red Mill TVP, 1.5 cup
Boiling Water 1.5 cup

For Cornbread:
Yellow Cornmeal, .75 cup
Egg white, 2
Milk, nonfat, .33 cup
Baking Powder, 1.5 tsp
Cheddar Cheese, .5 cup, shredded
Granulated Sugar, 1 tablespoon


How Do I Make Spanish Pie?

Here is how you make Spanish Pie:

In a small mixing bowl combine TVP and boiling water. Let soak. Heat oil in a large skillet and cook onions, zucchini, and mushrooms until softened. Add in garlic and half of the canned corn and cook for another 1-2 minutes. Add in the seasonings, tomatoe sauce, TVP, cheese and stir 1-2 minutes until cheese melted and well distributed.In a separte bowl combine cornmeal, sugar, baking powder, egg whites, milk and other half of canned corn. Mix until everything is moist but don't over mix. Spread TVP mixture evenly in a baking dish. Pour cornmeal mixture over the top and spread evenly. Bake at 425 for 20 minutes or until the corn bread is cooked through. Notes: TVP (textured vegetable protein) is a cheap and low calorie protein source. It has no flavor on its own so be sure to season well. My family doesn't like much heat so I am pretty conservative with the spice. Adjust to your taste.
