* Celery, raw, 1 stalk, medium (7-1/2" - 8" long)

* Vegetable Broth, 3 cup

* 1 TBSP cooking sherry

* Peas, frozen, 1 cup

How Do I Make Savory Vegan Pot Pie?

Here is how you make Savory Vegan Pot Pie:

Heat 3 tblsp oil in a big pot. Add the 1/4 cup flour and cook until browned. Add the chopped leek (or an onion) and cook for several minutes, until softened. Add chopped celery, diced carrot, parsnip and potatoes and cook for a few minutes. Add spice-- sage, thyme work well. Add 1 tbsp soy sauce. Cook for a few minutes.Add the broth and simmer until vegetables are tender. (In a seperate skillet, slice and saute the sausage until browned)Add the sausage, cooking sherry and soy milk and cook a few more minutes. If stew needs to be thickened, take some broth out and stir in a tblsp of flour and stir back in until proper consistency. Pour into a pie plate and cover with pie crust. Bake at 375 until crust is browned, 30-45 minutes.Number of Servings: 8
