If not already made, boil the 620g of white potatoes and mash with 5 fl oz of soya milk.Fry off the onion and garlic in a pan with the 6 sprays of One-Cal spray olive oil.Add all the other veg, the canned tomatoes and the herbs and any other seasoning.Simmer for about 10 mins.Stir in the 400g of red lentils.Put the lentil and veg mix in a greased ovenproof dish.Top with the mashed potato and spread evenly over the mix with a fork.
