3/4 cup uncooked lentils
1 1/2 - 2 cups vegetable broth
1 tsp onion powder
1/2 tsp garlic powder
1 bay leaf
2 leeks, washed and diced
1 cup diced mushrooms
3 cups cooked cauliflower
2 T vegan margarine
2 t canola oil
S&P to taste



How Do I Make Vegan Shepherdess Pie?

Here is how you make Vegan Shepherdess Pie:

Rinse lentils and place in a pot with 2 1/2 cups water, onion powder, garlic powder and bay leaf. Bring to a boil and cook on low till tender, around 30 minutes.Meanwhile, add rinced millet and vegetable broth to another pot. Bring to a boil. Cook on low, stirring often, till cooked and creamy, 20-30 minutes.Once the lentils and millet are simmering, put the canola oil in a large pan. Add leeks and mushrooms and saute till leeks are tender. If they start to stick, add water a T at a time.When the lentils are done, strain any remaining water and remove bay leaf. Add to leek mixture and stir together. Place in the bottom of a deep 8' baking dish.Put cooked cauliflower into a medium bowl and mash well. Add cooked millet and vegan margarine and stir vigorously until failrly smooth. Add salt and pepper if desired.Spread mixture over lentils. Place in a 350 degree oven and bake for 15-20 minutes till heated through.
