3 cloves garlic peeled and diced
1 cup zucchini sliced
2 carrots peeled and coined
2 parsnips peeled and coined
1 cup coconut milk
1 cup water
1 1/2tbsp cornstarch
1/2 cup tofu rinsed and diced small
1/2 tsp dried basil
1/2 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp sea salt
1/2 tsp black pepper

Here is how you make Country Vegetable Pie:

PastryIn a bowl combine all-purpose flour, xanthan gum rub in butter, salt, pepper and thyme. Add cold water to form a firm ball. Cover and chill in fridge for 15minutes.In a pan place the onion, garlic, carrots and parsnips cover with water, and cook until just soft.Drain reserving 1 cup of the water.In another pot place the cup of water plus the 1/2 cup of coconut milk, heat slowly, in a small jug combine the remaining coconut milk with the cornstarch, pour into pot and cook until thick. Add the herbs salt and pepper, stir in the vegetables and the tofu.Set aside.Take pastry out of fridge, cut in half, roll out first half, until it will fit a greased 8" pie dish. After the bottom layer is in pan, pour veggies and sauce on top. Roll out 2nd 1/2 of pastry, cover pie, crimp edges, make a slit out on top, brush with milk.Bake in Preheat oven 350f, for 30 mins until golden brown. Serving Size:?8
