* 2 med. carrots, thinly sliced
* 2 med. celery stalks, chopped
* 1 med. onion, diced
* 1 1/4 C nonfat milk
* 3 TB all purpose flour
* 2 C low sodium chicken broth
* 1 1/2 C frozen corn
* 1 small bunch broccoli, or about 2 C, chopped bite sized
* 1 tsp dried rosemary
* 2 tsp thyme
* 1 1/4 tsp salt

Here is how you make No Crust Vegetable "Pot Pie":

* About 1 hour before serving: in oil, cook mushrooms, turnips, carrots, celery, and onion, stirring 8-10 minutes. * Mix milk with flour and stir into veggie mixture, along with broth, corn, broccoli, herbs, and salt. * On high heat, bring the mixture to boiling. REduce heat to low, cover and simmer 15-20 minutes, or until the veggies are tender. * Serve hot in bowls, topped with a fluffy drop biscuit on top.
