2 tbsp flour, whole wheat

2 cups low-sodium Vegetable Broth
1 frozen packaged whole wheat pie crust

Here is how you make Roasted Vegetable Pie:

Preheat oven to 425 degrees.Place all vegetables in a roasting pan, toss with rosemary, pepper, and tablespoon of olive oil, if using. Roast for 40 minutes, stirring half way through, until roasted. Set aside.In non-stick skillet, brown flour slightly over medium heat. Slowly add broth to skillet, stirring with whisk. Bring to a bubble and cook, stirring often, until thickened, about 10 minutes.Spoon vegetables into pie crust until full, packing down. (You will have vegetables leftover!)
