Kale or Spinach, 4 cup, chopped
*Walnut Oil or Olive Oil, 2 tbsp

How Do I Make Vegetable Cottage Pie?

Here is how you make Vegetable Cottage Pie:

Place potatoes in a medium pot and cover with water. Bring to a boil and cook until potatoes are tender, about 20 minutes. Drain and mash with the oil and salt until smooth. (Some lumps are OK)Mash the black-eyed peas or process in a food processor for 1 minute.Heat a large heavy skillet over medium high heat. Oil spray pan. Add eggplant, carrots, onions, grlied and spices. Cook utnil slightly browned about 15 minutes,stirring often. Add the black eyed peas, turn off the heat and stir in the kale or spinach.Place the eggplant mixture into a 9 inch pan and cover with the mashed potatoes. Bake for 10 minutes. Or refrigerate and reheat in a 375 oven until warmed through, about 20 minutes (35 if doubled). Turn oven to broil until the tops of the potatoes are browned, about 5 minutes. Serve.Note: I have some Roasted Walnut oil and used that in the mashed potatoes for added flavor.
