How Do I Make Vegetable Pot Pie?

Here is how you make Vegetable Pot Pie:

Preheat oven to 400 degrees.Just a note, be sure to season every layer with salt & pepper.Saute diced carrots, onions, mushrooms and garlic for 4 to 5 minutes in butter spray or olive oil. Then add sweet potato, potatoes, butternut squash & parsnip. Let it cook for another minute or so.Add vegetable broth to cover. Bring to a boil and then simmer about 15 minutes or so until potatoes and butternut squash are almost cooked through. Add seasonings, and butter, allow butter to melt. Add 1 or 2 tbsp. whole wheat flour to thicken. Add cream of mushroom soup and simmer a minute more. Pour mixture into 9x12 pan. Roll out the croissants and use as a pie shell. You can also use puff pastry or pie shells. Bake for 30 minutes.Serving Size:?6
