1 cup frozen cauliflower

1 red bell pepper chopped

4 tablespoons Mrs. Dash (or to taste)
1 10 oz. pkg frozen spinach, drained
1/2 cup carrot juice
4 teaspoons corn starch


How Do I Make Vegetable Shepherd's Pie?

Here is how you make Vegetable Shepherd's Pie:

Preheat oven to 375. Bake the sweet potatoes until soft, around 45 minutes. When potatoes are tender, remove from oven, mash and set aside.Put cauliflower, oriental veggie mix, leeks, bell pepper, Mrs. Dash in a sauce pan with between 1-1/2 to 2 cups of water. Simmer till veggies are tender, then add the spinach and chickpeas, mix and heat through.Drain the vegetables, saving the broth. Mix the corn starch with the carrot juice. Bring the vegetable broth to a boil and add the carrot juice/corn starch mix. Stir til thickened like a gravy. Add the vegetable mix to the veggie gravy and mix well.Divide the mixture between two 8" pie pans. Spread the mashed sweet potatoes over the mixture. Bake for 35 minutes.
