2 large potatoes (or 4 small ones)
3/4 cup dry lentils
1/2 pound mushrooms, sliced
1/2 cup bulger wheat
1 tsp soy sauce
5 Tbsp butter, divided
1 Tbsp olive or canola oil
1/2 onion
1/4 cup stout beer
1 stalk celery
1 cup vegetables (diced carrots, corn, peas)
1 Tbsp flour
1/4 cup vegetable broth
1/4 cup milk
1/4 cup shredded cheese


How Do I Make Vegetarian Cottage Pie?

Here is how you make Vegetarian Cottage Pie:

Rinse and pick over lentils. Boil hard for 3 minutes and then simmer another 15-20 or until tender and then drain. In a separate pot, simmer bulger wheat for 10-15 minutes, drain and set aside.Peel potatoes. Cut into reasonable sized pieces, cover with water, boil and simmer until very tender. Drain and mash with 2 T butter, 1/4 cup milk and 1/4 cup shredded cheese.Meanwhile, bring 1 T butter and oil to hot in a wide nonstick pan and cook mushrooms until they give up and reabsorb their liquid, crackling in the pan. Add mushrooms to drained lentils. Lower heat, add 1 T butter to the pan and saute onions until golden. Add to the mushrooms and lentils and lightly process with immersion blender or food processor. Mix in bulger wheat and season with a little soy sauce.In the same pan, cook finely chopped veggies and celery until tender, about 8 minutes. Add garlic for just about 60 seconds. Add stout and scrape up the browned bits. Now melt in the last T butter, sprinkle with 1 T flour and mix well. Add the veggie broth in slowly to make a brown sauce. Season with a little salt and pepper, some thyme if you like.Butter an 8" square pan. Add mushroom-lentil mixture, top with veggies in sauce, top with potatoes, spreading with a spatula and then using fork to "rough up" the surface a bit.Bake at 400 for 30 minutes.
