The ingredients for Vegetarian Sheppards Pie are:

- 5 small white potatoes
- 1tbsp olive oil
- 1C onions, chopped
- 6 cloves of garlic, minced
- 2 pkgs of Yves Italian veggie ground round
- 2tbsp soy sauce
- 2tbsp vegetable broth
- 2tbsp hot sauce (I used Franks Chili & Lime)
- 2 cans of corn, one regular and one creamed (or use fresh or frozen, doesn't really matter)
- 1tbsp savory
- 1tbsp oregano
- 1tbsp basil
- 1tbsp sage
smoked paprika, chili powder, salt and pepper to taste


How Do I Make Vegetarian Sheppards Pie?

Here is how you make Vegetarian Sheppards Pie:

Set oven to 350 F.- Put a large pot of water on to boil for the potatoes.- Peel, wash and dice potatoes.- When water is boiling, add potatoes and cook until tender.- While that is cooking, add oil to saute pan and turn to medium heat.- When oil is heated, add garlic and onion. Turn heat to medium low and cook until onion is translucent.- Add remaining ingredients with the exception of paprika until heated. About 5 minutes.- Spray a 9x13 cooking dish with oil and spread the ground round mixture over the bottom, patting down with the back of a large spoon.- Add corn to the top and spread evenly.- When potatoes are tender, drain them and put them into a large bowl. If you want to cut back on the fat more, don't add milk or butter, just save some of the potato water and add for moisture, about half a cup. Mash with a masher until desired consistency. If you're like me and love whipped potatoes, just mash until the bigger chunks are smooshy and then take out a hand mixer to finish. If you want to, you can add 2tbsp of butter and half a cup of milk to make it creamier. Add about 1/2tbsp of smoked paprika to the mixture half way through.- Spread the mashed potatoes evenly over the top of the corn and spinkle some more paprika over the top.- Pop into oven for 30 minutes!Serves 12.Number of Servings: 12Recipe submitted by SparkPeople user PINKCOCONUT.
