2.5 cups carrots - peeled and diced
1 cups celery - diced
1 med onion - diced (I used white)
2 cups mushrooms -quartered(the pre-sliced would be fine too- about 1 of those cardboard containers)
4-5 tbsp canola oil (or olive etc)
2tbsp flour

4 med white potatoes - diced & peeled
2 large sweet potatoes - diced & peeled
3 tablespoons Brommel & brown(or butter)
1 cup Fat Free Plain Greek yogurt
2 cups Mozzarella Cheese


How Do I Make Veggie Shepards Pie?

Here is how you make Veggie Shepards Pie:

Put white & sweet potatoes in pot on stove & cook till soft. Drain, mash and add butter & greek yogurt & mix throughly. Set aside.Cook diced carrots, celery, onion & mushrooms in a large pan with oil, S & P, garlic, spices to taste- till tender. At end, turn off stove and add flour to coat. Stir it in till no powder remains.Spoon veggies evenly into a 13x9 pan, discarding any extra liquid oil on bottom of pan. Spread Mashed Potatoes evenly on top. Sprinkle 1/2 cup sharp cheddar on top of potatoes.Bake st 350degrees for 30mins or till hot & cheese is melted.
