Here is how you make Jody's Kitchen Presents: Cauliflower Pizza:

Preheat Oven 400Line baking sheet with parchment paper. Cut cauliflower and put in blender about half, and blend until about the consistency of rice (slightly larger is ok). Pour into microwave safe bowl, and then blend 2nd half and add to the rest.Cover cauliflower and microwave on high for 3 minutes, remove and stir.Recover back in micorwave and heat for an additional 4 minutes.Set aside and cool for 5 minutes.Pour Culiflower into a towel and ring it out to remove as much moisture as possible. Excess moisture can cause crust not to stay together.Mix in the Egg Whites, .25 cup Mozzarella, Parmesan Cheese, and seasonings. Split into 2 round pizza shapes, and about .25 inch thick. Place on the parchment paper. Bake for 35 minutes or until tops are brown. In sauce pan, spray with zero calorie cooking spray (I use PAM). Over medium heat add pepper, onion, and mushrooms and saut? about 10 minutes. (Until onions are translucent).In seperate pan, spray with zero calorie cooking spray, and add your spinach.Cook just until wilted, and liquid has evaporated. Set aside.Remove crusts from oven, and split sauce between the 2 crusts, split half the saut?ed vegetables, and spice between each crust.
