4 1/2 cups whole wheat flour
Extra flour for kneading
1 c warm water
1 tbsp raw honey
1 tbsp olive oil
2 heaping tbsp whey, kefir, or apple cider vinegar
1 tbsp instant yeast or yeast that has been activated
4-8 teaspoons yellow cornmeal (I did not use this because my pizza pans are non-stick)

1 cup Daiya cheese (or other preferred)
1 cup raw broccoli
spinach


How Do I Make Soaked Pizza Dough?

Here is how you make Soaked Pizza Dough:

On the night before you want to serve your pizza:Combine:1 ? c warm water1 tbsp raw honey1 tbsp olive oil2 heaping tbsp whey, kefir, or apple cider vinegarMix with 4 1/4 c flour (I use whole wheat flour or spelt)Cover and leave on counter for 12-24 hoursNext Day: Add 1 tsp salt1 tbsp instant yeast or yeast that has been activatedKnead on a well-floured surface for 10 min, adding flour as needed to keep it from getting too sticky. Lightly cover with oil and place in a warm area for 1 hr to rise (an oven heated to 150-170 and then turned off is perfect)When the dough has roughly doubled in size, punch it down and divide it into two. Form a ball with half of the dough and roll out on a pastry cloth or well-floured surface. Add half of cornmeal (if using) to pizza stone or baking sheet, gently transfer dough on top and bake at 350 degrees for 5 minutes. Repeat process with second half of dough. Now, just add toppings (I used 1 cup of Daiya cheese to keep it vegan, and some broccoli and spinach) and bake for about 20 minutes!Serving Size: Makes 16 slices from two pizzas (8 slices each)Number of Servings: 16Recipe submitted by SparkPeople user JULIEFILTER.
