Here is how you make Lydia's Gluten-Free Pizza Dough:

Proof water, yeast and sugar.Whisk together 2 TBSP olive oil, herbs, vinegar, salt and xanthan.Whisk in yeast mixture.Add flour.Mix by hand for 3 minutes. Leave to rest while you oil the pan and sprinkle cornmeal.With oily or wet hands, spread dough out on cookie sheet. It should come close to the edges.Let it rest in a warm place while you preheat oven to 425 F.Prebake 10 minutes.Add sauce and toppings.
