Add salt, honey/agave, and 1 Tbsp EVOOStir in 2 c. flour with dough hook attachment; add up to 1 c. more until dough pulls away from side of bowl. Cover, rise in a warm place until doubled, about 45 min to 1 hour.Preheat oven to 475. Punch down and knead gently for a few seconds on a floured surface, stretch out with fingers until it's about 18 inches wide, onto a peel sprinkled with cornmeal. Let rest a few minutes. Top with remaining EVOO and pesto, sprinkle with sea salt, pepper, oregano, and parsley. Top with shredded cheese, add spinach, olives and tomatoes. Bake at 475 on a preheated pizza stone sprinkled with more cornmeal for 10-12 minutes until the cheese is melted and bubbly and edges of dough are browned.
