For the crust:
2 Medium zucchinis
1/2 cup Parmesan cheese
1/4 cup flour
2 eggs, minus one yolk
Some fresh basil

For the pesto:
1/2 cup fresh basil
1/4 cup walnuts
2-4 cloves of garlic
1 Tbsp olive oil

For the toppings:
Whatever veggies you want, I use zucchini, broccoli, mushrooms, and red onion
1/2 cup shredded Mozarella cheese



How Do I Make Zucchini Crusted Pesto Pizza?

Here is how you make Zucchini Crusted Pesto Pizza:

To make the crust:Preheat the oven to 400. Line a 9x11 baking pan with foil, spray the foil with non-stick spray.In a food processor mix together the egg, parmesan, flour and basil to form a thick liquid. Shred the zucchini and mix with the liquid. Spread into prepared pan and put a layer of foil over the top, not touching the batter. Bake for about 30-40 minutes or until done, slightly brown on top.In the meantime wash the food processor and make the pesto by mixing the basil, walnuts and olive oil.After the crust is done baking remove from oven and transfer the crust, sans foil, to a cookie sheet. Spread the pesto mixture on top of the crust, add the veggies and cheese toppings. Bake about 10 more minutes or until brown.1 serving = 1/2 the pizza.
