1 cup of egg whites
1 T olive oil
1/2 cup onions, chopped
1.4 of a package of frozen broccoli
1/2 cup of shredded frozen potatoes
1/2 cup of frozen corn kernels
1/4 cup parmesan cheese
2 tsp thyme
1 tsp garlic powder


How Do I Make Potato and Broccoli Frittata?

Here is how you make Potato and Broccoli Frittata:

Heat oil in skillet over medium heat, preferably skillet that can be transferred later to oven. Add onions and let them begin to caramelize, about 3-4 minutes. Add shredded potatoes, broccoli pieces (smaller florets are best), and corn along with thyme and garlic powder. Mix so all are coated with a little oil, place lid on skillet and let cook over medium heat for 3-4 minutes until the potatoes and broccoli are soft. In the meantime, whisk together the two eggs and cup of egg whites, adding in the grated parmesan cheese. Add egg mix to skillet and stir in so it is evenly distributed. Replace lid and let cook over medium for about 5 minutes, until the egg mix begins to set and is no longer runny. Heat over broiler while the egg mix is cooking, then place the skillet (only if oven safe) under the broiler for 4-5 minutes to brown lightly. Remove from oven and flip out onto a cookie sheet or flat pan.
