Preheat oven to 375F.Coat a 9-inch pie plate with cooking spray. Arrange thinly sliced potato around the bottom of the pan until covered. Set aside.Coat a nonstick skillet with cooking spray and heat over medium heat. Add chopped onions, peppers, and soy bacon. Saute until onion are translucent and soy bacon begins to crisp. Remove from heat and allow to cool while assembling the egg mixture.In a medium bowl, combine eggs, egg whites, milk, and spices. Whisk until frothy. Add cheese, broccoli, and onion mixture and stir.
