Potato pancakes made a delicious supper topped with homemade applesauce, grated cheddar cheese, and sour cream. You can add grated carrot or sweet potato with the regular potato for a nice twist. Omit the onion, or substitute some green onions or chives or parsley - this is versatile. What Course Is Potato Latkes?Potato Latkes is for Dinner. How Long Does Potato Latkes Recipe Take To Prepare?Potato Latkes takes 10 minutes to prepare. How Long Does Potato Latkes Recipe Take To Cook?Potato Latkes takes 20 minutes to cook. How Many Servings Does Potato Latkes Recipe Make?Potato Latkes makes 4 servings. What Are The Ingredients For Potato Latkes Recipe? The ingredients for Potato Latkes are: 2 medium Yukon Gold potatoes, washed but not peeled2 eggs 1/2 medium white onion, outer covering and core removed 1/2 to 3/4 cup flour salt and pepper 1/4 cup canola oil How Do I Make Potato Latkes? Here is how you make Potato Latkes: 1. Use either a manual grater, or easier, a food processor, to grate the onion and potatoes. Put the grated vegetables in a bowl, add the eggs and stir until soupy. Add the flour in 1/4 cups until you get a reasonable batter that is still very wet - if it is too stiff the pancakes will not spread out and get crispy edges. Season with salt and pepper and give it another stir.2. Meanwhile, preheat the 1/4 cup of canola oil (or safflower, corn or peanut, but not olive oil as it will burn) in a large rimmed pan (I use an old electric frying pan that works very well) until quite hot but not smoking. Put in small dollops of the potato mixture, and spread it out thinly with a silicone spatula - these need to be thin to be good, so a few holes in the middle are fine.3. Cook at medium high heat until nicely browned and crispy, then flip and do the other side. 4. Put on paper towels on a rack and keep warm in a 250 F oven while you do the rest of the pancakes.5. Serve on warmed plates. Nice with applesauce for sure, and grated cheese and sour cream or thick plain yogurt are yummy too.Number of Servings: 4Recipe submitted by SparkPeople user HOLDINGON2.What's The Nutritional Info For Potato Latkes? The nutritional information for Potato Latkes is:
