Heat oven to 375 degrees. Heat oil in large skillet over medium heat. Add the leeks, zucchini, 1/2 teaspoon salt and 1/4 teaspoon pepper and saute, stirring frequently, until just tender. 4-5 minutes.Stir in the cheese. Add the potatoes and toss in the skillet to combine.Spoon the potatoe mixture onto the piecrust, leaving a 2" border.
