3 Tbsp maple syrup
6 multi grain tortilla
1 cup Monterey Jack cheese, shredded

For the Filling:1. Preheat oven to 400F. Toss pumpkin, potato, garlic and onions in olive oil and maple syrup.2. Layer in a large cookie sheet lined with foil3. Bake for 20 minutes4. Stir once, then continue baking for another 20 minutes or until all ingredients are soft and slightly browned.5. Let cool, partially mash into smaller chunksQuesadilla1. Heat panini maker (or large nonstick pan to medium-high heat.) Place one tortilla in the pan.2. Once tortilla is heated, sprinkle with 1/6 of cheese.3. Layer a third of the pumpkin mixture over the tortilla. sprinkle more cheese.4. Top with second tortilla, pressing lightly to compress the quesadilla.5. If using panini maker, press down to flatten. (If using pan, reduce heat to low, cover pan, and heat through until cheese has melted.)6. When tortilla is slightly brown, flip to other side.7.
