8 oz (240 g) mushrooms, sliced
1 bunch Broccoli (approx. 335 g), chopped
2 medium carrots (approx. 165 g), sliced
2 medium red peppers (approx. 300 g), chopped
2 medium zucchini (approx. 425 g), sliced
1 block tofu (475 g), soft or medium
1/2 tsp cayenne pepper
1 tsp oregano
1 tsp basil
8 cups tomato sauce
1 1/2 boxes whole wheat lasagna noodles (560 g), pre-soaked in water
8 cups (240 g) spinach
4 (1365 g) medium sweet potatoes, cooked and mashed
6 plum tomatoes, sliced thin
1/2 cup (75 g) raw cashews, ground
1/2 cup nutritional yeast

Here is how you make Sweet Potato Lasagna:

Preheat oven to 400 degrees.Saute the onion and garlic on medium-high heat for 3 minutes in a non-stick skillet. Add the mushrooms and cook until the onions are limp and mushrooms give up their liquid. Remove them to a large bowl with a slotted spoon.In the same pan, saute the broccoli and carrots for 5 minutes and add to the mushroom bowl. Saute the peppers and zucchini until just beginning to soften. Add them to the vegetable bowl.Saute the spinach in 2 tbsp of water until limp. Set aside.Break up the tofu into a course crumble and add to the vegetable bowl. Add spices to the vegetable bowl and combine.To assemble the lasagna:Cover the bottom of three 9-by-13-inch casseroles dishes, coated with non-stick spray, with a layer of sauce. Add a layer of noodles. Cover the noodles with sauce. Sprinkle half of the yeast over the sauce. Spread the vegetable mixture over the sauced noodles. Cover with a layer of noodles and another dressing of sauce. Add the spinach to the second layer of sauced noodles. Cover the spinach with the mashed sweet potatoes. Add another layer of sauce, the final layer of noodles and a last topping of sauce. Cover the lasagna with thinly sliced tomatoes. Sprinkle remaining yeast over tomatoes. Cover with foil and bake in the oven for 45 minutes. Remove the foil, sprinkle with cashews and return to the oven for 15 minutes.
