Raviolis:
6 wonton wrappers
6 oz part skim ricotta cheese
1 tsp lemon juice
1 clove of garlic
1 egg white w/ a 1/2 tsp of water
Pesto:
1 cup of chopped kale
2 cloves of garlic
1/3 cup olive oil


How Do I Make Sweet Potato Ravioli with Kale Pesto?

Here is how you make Sweet Potato Ravioli with Kale Pesto:

1. Clean, peel, and cut sweet potato. Boil until tender2. Using a food processer or hand blender, puree sweet potato.3. Combine in Ricotta, lemon juice, garlic and any seasonings you want in the filling.4. brush the wonton wrappers with an egg wash (egg whites with a little water)5. Either spoon mixture into piping bag and pipe small amounts into the wrappers or you can just use a spoon.6. Either fold over or use anouther wrapper to cover (this would change the nutrition info)7. Start a pot of water to boil and set ravioli aside.8. with either a food processor or a hand blender puree kale, garlic, and pine nuts if you choose. slowly add the olive oil until it is a smooth paste.9.
