Makes 8 servings1. Preheat over to 375°F. Coat a 2-quart baking dish with cooking spray.2. Heat olive oil in a large pot over medium heat. Add onion and cook until onion begins to brown, about 5 minutes. Stir in flour. Stir in milk. 3. Stir in potatoes and bring to a boil. Stir in salt and pepper. Add 3/4 cup cheese and stir.4.
