How Do I Make Low Carb Protein Power Pumpkin Pancakes!?

Here is how you make Low Carb Protein Power Pumpkin Pancakes!:

1. Mix all the wet ingredients in one bowl and dry ingredients in another. Slowly add the dry to the wet and mix well.2. Let mixture sit for a few minutes and then stir well again (I find that this helps the protein powder dissolve adequately)3. Heat a frying pan on med-low heat and lightly grease with nonstick spray.4. If you want 8 larger pancakes, use a 1/2 cup of batter for each pancake. Smaller pancakes use 1/4 cup of batter.5. Watch the edges and as they start to dry, lift up the pancake to check the color. If it is starting to brown, go ahead and flip. I cooked anywhere from 4-5 minutes per side to get them cooked through.6. Remove, add a bit of butter or spray with I Can't Believe It's Not Butter Spray and then drizzle with your favorite SF syrup.NOTE: if you have had bariatric surgery, you might want to make the smaller pancakes. I count half of the larger ones as a serving size for myself.Number of Servings: 8Recipe submitted by SparkPeople user METVAN.
