(May pre-cook pie crust slightly if desired - will lessen final cook time by about 10 min.)6. crack eggs into large bowl and slightly beat with fork. Add spices and buttermilk (or regular milk), beat lightly with fork until yolks are completely broken up. 7. Add drained spinach, mix with fork until well combined.8. to pie plate, place 1/3 shredded cheese on evenly on bottom.9. Add onions and 1/3 shredded cheese to egg mixture, mix with fork until well combined.10. pour into pie plate.11. top with remaining shredded cheese.12. may sprinkle top with pepper or paprika if desired.13. bake at 350 for 40 to 45 minutes, until set and knife poked into center comes out moist (not wet - if it's dry it is overcooked but still edible).
