This recipe is a healthier adaptation of a rice dish my mother used to bake for me when I was growing up. I've made a few changes, including the removal of her boneless skinless chicken breast. Preheat the oven to 375 degrees Fahrenheit. Add all ingredients except water to a square, glass/pyrex baking pan, approx. 8" x 8". Bring the 1.25 cups of water to boil once you notice the oven is preheated. Meanwhile, prepare two sheets of tinfoil to cover the baking dish with and make sure its contents are sort of evenly spread out. Once the water beings to boil, add to baking dish. Stir it enough to make sure the contents are all moistened and cover immediately after with both sheets of tinfoil. Place in the preheated oven for 20 minutes. Remove one sheet of tinfoil and continue to bake for about 5 - 8 minutes, until you see a bit of expansion in the grains. Remove from the oven and let sit for about 10 minutes or until the moisture is completely absorbed and the quinoa is fluffy.
