Stir in the quinoa, 1/2 tsp curry powder, and salt and cook for 2 minutes. Add 2c boiling water and lower the heat. Cover and cook 15 minutes.Meanwhile, heat the remaining oil in a skillet. Add 3/4 onion, zucchini, and remaining curry powder. Cook, stirring frequently, over medium heat, for 5 minutes. Add 1/2c water, carrot juice, and salt. Cover and simmer 5 minutes, then add peas and scallions and cook for a few more minutes. Stir veggies and cashews into quinoa. Season w/ salt and pepper.
