Here is how you make Quinoa and Red Lentil Cutlets:

Rinse quinoa in several changes of water. Cook lentils and quinoa in 4 cups water for 20 minutes. Let cool. Preheat oven to 350. Mix drained quinoa/lentil mixture with all ingredients except gluten. Mix in the gluten and knead for 5 minutes. Divide evenly in 8 pieces and flatten to 1/2 - 3/4 in. thick rectangles. Bake 20 minutes, turn and bake another 10-15 minutes.
