Here is how you make Ratatouille Parmigiana:

Preheat oven to 350F. Grease large casserole dish, or two shallow coated (or Pyrex) dishes with 2 tbsp olive oil.Heat remaining 2 tablespoons olive oil in a large skillet over medium heat. Mix in fresh herbs, a sprinkle of garlic powder, and eggplant. Saute until eggplant is soft, about 10-15 mins. Season to taste.Spread eggplant mixture evenly across bottom of the greased dish(es). Sprinkle with a few tablespoons of parmesan cheese. Spread zucchini in an even layer over top. Lightly salt and sprinkle with a little more cheese.
