Here is how you make Terresia's Ratatouille #2:

First take the 3 Red Peppers - washed and dry - lay on foil enough to wrap - sprinkle with olive oil - bake in a 375 oven for 45 minutes - leave wrapped to cool for 15 minutes then remove the outside skin - it should people off really easy - remove all seeds. Sometimes I do this a day ahead of time. Be sure and add the juice from this to the soup.You can use this instead of the jarred Trader Joe's roasted peppers or you can add it also. I have made it both ways and it is great either way.I use the Trader Joe's Organic Marinara sauce and I add a little bit of water to get all the sauce out of the jar.I saute the onion in olive oil first and then start adding all the other ingredients while the red peppers are in the oven.It is not really 60 minutes of prep, but I put that because you have to wait for the red peppers.Number of Servings: 12Recipe submitted by SparkPeople user TERRESIA.
