2 tbl olive oil
1 chopped onion - brown the onion
2-3 clove garlic - brown with the onion

1 eggplant - chop 1" squares, do not peel - add to onion and garlic, cook until brown (about 10 mins)


2-3 zuchinni, cubed
Red pepper, sliced or chopped (optional)
thyme
basil
parsley
oregano

Add red pepper and zuchinni and cook for about 10 minutes

Add all spices, salt and pepper

Optional 1 diced jalapeno pepper

Add 16oz or 28 oz canned tomatoes and sliced mushrooms, stir in and bring to boil

Simmer with spices for 15 minutes
