Add tomatoes, rosemary, bay leaf, and garlic. Set Aside.Meanwhile, in a medium skillet over medium heat, heat the remaining 2 T Olive Oil and cook eggplant & Zucchini until golden (3-4 min). Drain on paper towels. Add eggplant, Zucchini, dates, and paprika to the mixture in the casserole. Stir to blend. Cover tightly and bake until the vegetables are tender (25-30 min). Remove from the oven and discard the rosemary and bay leaf (we didn't have a sprig of rosemary, so we just used rosemary leaves and left them in the casserole). Season with salt and pepper. Garnish with toasted almonds. Serve hot or at room temperature.
