preheat oven to 350. Add vegetable broth to a pot and boil, add rice and simmer for 20 minutes. In a skillet add oil, add chopped zucchini and onion. Saute on medium for about 10 minutes. When everything is done mix rice, zuchhini and onions, black beans and celery in a bowl. Mix in half of the cheese. Transfer to a casserole dish. Add remaining cheese to the top.
