This is a recipe that I found on SparkPeople but the calories listed on that recipe seemed low to me. The recipe stated it made 8 servings at 235.4 calories/serving. When I calculated this with the listed ingredients I come up with 376.2 calories per serving (8 servings). The picture posted is 1 serving on a normal size plate so it's a fair amount of food. Next time I make this I will probably add some chili powder and cumin to give it a little more flavor. It was very good, but needs just a little more kick.
