? 1 1/2 cups chopped onions
? 1 cup chopped sweet green pepper
? 1/2 cup diced celery
? 2 cloves garlic, minced
? 1 can (28 oz) tomatoes, un-drained, diced
? 1 1/4 cups low sodium, reduced fat, chicken broth
? 1 cup uncooked long grain white rice (basmati is nice)
? 2 tbsp tomato paste
? 1 tsp each, chili powder, dried oregano, and ground cumin
? 1/2 tsp each, ground thyme and black pepper
? 1/4 tsp cayenne pepper
? 1 can (19 ounce) black beans, drained and rinsed


How Do I Make Savory Black Beans and Rice?

Here is how you make Savory Black Beans and Rice:

Instructions: Spray a large saucepan with non-stick spray. Add onions, green pepper, celery and garlic. Cook over medium heat until vegetables are soft, about 5 minutes. Stir in remaining ingredients, except beans. Bring to a boil. Reduce heat to medium low, cover and simmer for 25 minutes, stirring occasionally. Stir in beans during last 5 minutes of cooking time.
