I kind of do this one by sight and am still trying to figure out the timing. I'll come back and edit when I get that figured out a little better... But here goesPut your rice, water, tomatoes in your slow cooker. Turn on high. Cook for a couple of hours until rice is almost done.Add in your beans, seasonings, and onions and peppers. I like to buy a mix of frozen chopped onion and peppers and just use about a cup and a half of that. It works for me and makes it super easy! Turn on to low and let it do it's thing for a few more hours. Serve topped with a little reduced fat cheese if you would like... some sour cream... or avocado... or all three!!!
