My second concoction of a vegetarian sloppy joe mix - 100 calories of protein, low-cal, filling goodness. I love this on a toasted english muffin or in place of a beef burger, but it might shine best as burrito filling, or a healthy side dish for a bbq! I can get away with bringing this as a side dish to a bbq or celebration, and then eat it in place of the meaty/cheesy main dish served. :) As my second concoction, the consistency of this recipe is more solid (less runny) and a bit more spicy (make less spicy by omitting or reducing chilis/spices)Serving size is 1/2 cup. Makes about 15 servings! (Perfect for a crowd, leftover lunches, or freezing some for quick lunches later, especially in low-carb tortillas!)

3/4 T. Olive oil
1 oz lime juice
4 cloves garlic
1 sweet onion
1 bell pepper
4 oz (1 can) tomato paste
15 oz (1 can) black beans
15-20 oz (1 can) kidney beans (I like the red ones)
1 T. brown sugar
2 cups brown rice
1 T. Worchestershire sauce (omit for true vegetarian recipe!)
15 oz (1 can) diced tomatoes
4 oz (1 can) green chili peppers
1 tsp cumin
1 dash black pepper
1 tsp red or cayenne pepper
1/2 tsp salt


How Do I Make Spicy Beans and Rice?

Here is how you make Spicy Beans and Rice:

Heat a large pot on medium heat; add olive oil when hot so it thins out and you can use less of it. Saute onions and garlic till onion is somewhat clear, about 3 min. Add green pepper and let cook another 5 min or so, till veggies are tender.Add everything else, stir, heat through (low-med heat due to thick consistency), and serve! You shouldn't need to thicken mixture, but if you do, do so by simmering it on stove, uncovered. Serve with whole grain buns, stone ground dijon mustard and fresh lettuce, with dill pickles on the side. Yum. Or in low-carb tortillas. Or as topping on toasted english muffins. Or on a salad. Or with crackers or tortilla chips.
