Sweet peppers 0.5 large (2-1/4 per lb, approx 3-3/4"
Mushrooms, fresh, 1 cup, pieces or slices
Paprika 2 tsp.
Salt and pepper to taste

Here is how you make Spicy Tofu with Arborio Rice and Broccoli:

*Cook rice with butter, sesame oil and onion for 3 to 5 minutes over medium heat then add in 3 cups of vegetable stock in large fry pan and cook uncovered until water is absorbed, about 20 minutes.* In separate pan fry with 1 or 2 tbsp of olive oil the Tofu cut into bite sized pieces till brown adding paprika, salt and pepper to give flavor* Remove rice after done from big pan and*Add broccoli cut up stems and head into bite size pieces along with mushrooms and sweet pepper using same pan adding Balsamic vinegar and cooked Tofu.* Cover and saute,stir till everything is cooked, don't overcook!*Add the cooked rice on top, cover and let rest for ten minutes on low.* Enjoy Serving Size: 10 servingsNumber of Servings: 10Recipe submitted by SparkPeople user KJBDOIT.
