Soak the red lentils in water for about an hour. In an oven proof pot, fry the chopped onion in the oil. Add thinly chopped carrots, rice and grated swede. At a low heat, add about 2 cups of water, and stir so that the ingredients are well mixed. Add the corn, two vegetable stock cubes and more water if necessary (1-3 cups, depending on how long the lentils soaked).
