6 cups cold cooked rice (short grain)
2 scallions, thinly sliced

Stir in cooked rice, scallions and vinegar mixture. Stir fry until rice is hot. Remove from heat and salt/pepper to taste. 4. Spread flat on cookie sheet and let cool.
