8 oz. tempeh, diced
1/4 of a fresh pineapple, chopped
1 c. unsalted roasted cashew pieces
1 tsp salt
1 tbsp low-sodium soy sauce
284 grams of cooked rice (I used Trader Joe's frozen brown rice, two packets)

Here is how you make Pineapple Fried Rice with Tempeh:

Prepare rice according to package directions. Set aside.In a wok or large skillet, combine the sesame and olive oils. As it heats, add the crushed garlic, then the green onions and bell pepper. As they soften, add the broccoli slaw and tempeh. Mix well. Add salt and pepper, then cashews, and mix well. Add the pineapple. After a minute or two, add the cooled rice. Mix well.Pour the soy sauce around the edge of the wok or skillet, then mix gently. Once the rice has heated through, serve immediately.
