Broccoli, fresh, 1.5 cup florets
Baby Carrots, raw, 6 large, julienned
Snap peas, 1 cup pods
Broadbeans (fava beans), fresh (cooked, not dry), .67 cup
Walnut Oil, 2 tbsp
Egg, fresh, 2 large beaten
Pineapple, canned, .67 cup chunks with juice
Cashew Nuts, dry roasted (salt added), .33 cup, halves and whole (seasoned are okay; try Braggs or curry flavor from Whole Foods)


How Do I Make Thai Fried Rice?

Here is how you make Thai Fried Rice:

Add 1 tbsp walnut oil to medium frying pan. Stir fry carrots for a couple of minutes. Add broccoli and peas, stir fry for about 5 minutes, until carrots are starting to become tender. Add fava beans, cashews, pineapple and juice. Stir fry 1 minute then cover. Allow veggies to steam until tender (about 3 minutes). Add thai rice and remaining walnut oil. Fry until rice starts to brown, about 6-8 minutes. Stir in eggs and stir until eggs are cooked. Serve hot.
