Combine the Olives, Tomato, Onion, Pepper in a bowl. Drizzle with a little olive oil and some of the juice from the olive container. Add Oregano. Season with salt and pepper to taste. Cover and refrigerate.I like to add a little crushed red pepper flakes to the mix as well, just to give it a little kick.Combine the rice, lentils and water in a large pot. Bring to boil. Cook until all water has been absorbed (about 30 minutes).
