Here is how you make Mexican "Fried" Rice:

Bring 1.5 Cups water to boil in small saucepan.In a medium frying pan, heat 1 tbs of olive oil. Add raw rice and stir constantly until water boils. Be careful not to burn. Add rice to salted boiling water. Cover, lower heat to simmer. Keep covered 20 minutes, then turn off heat and keep covered an additional 10 minutes.When the rice is at the 10 minute point, heat the frying pan over med-hi heat. Add all ingredients except the pepper jack cheese. "Fry" for about 6-8 minutes. Test rice for desired consistency. If ready, add rice to the pan and cook an additional 2-3 minutes.
